The founders have always envisioned it to be a place where chefs and small food businesses could test their concepts. Instead of leasing to established chains and proven concepts which are the most stable and reliable tenants, they chose to give a chance to small and new operators taking on higher risk alongside them. The restaurant industry inherently has a high failure rate and sadly most start-up restaurants do not make it. In today’s world, simply having delicious food isn’t always a guarantee of success. However, the founders felt it was important for the community to have a place where small food businesses could launch. Additionally, most new food halls tend to have high turnover in the early years since several new restaurants are opening all at once and not all of them will make it. Sometimes, vendors will close after a short period for personal reasons ranging from lifestyle choices to family matters. Sometimes, a vendor’s business is just not a good match for the setting. However, as time goes on, the vendor line-up becomes more stable as it fills with restaurants with sustainable businesses, concepts that work, and operators who have found their groove. Instead of leasing to established chains and proven concepts which are the most stable and reliable tenants, they chose to give a chance to small and new operators taking on higher risk alongside them. The restaurant industry inherently has a high failure rate and sadly most start-up restaurants do not make it. In today’s world, simply having delicious food isn’t always a guarantee of success. However, the founders felt it was important for the community to have a place where small food businesses could launch. Additionally, most new food halls tend to have high turnover in the early years since several new restaurants are opening all at once and not all of them will make it. Sometimes, vendors will close after a short period for personal reasons ranging from lifestyle choices to family matters. Sometimes, a vendor’s business is just not a good match for the setting. However, as time goes on, the vendor line-up becomes more stable as it fills with restaurants with sustainable businesses, concepts that work, and operators who have found their groove.
